3 ripe bananas, mashed
1 tablespoon vanilla extract
1/2 cup creamy peanut butter
3 tablespoons granulated sugar
1 cup old fashioned oats, ground to flour
½ cup AP flour
1 teaspoon baking powder
¼ teaspoon salt
½ cup chocolate chips
Preheat oven to 350 degrees F.
In a medium sized mixing bowl combine bananas, vanilla, peanut butter and granulated sugar until creamy.
In a separate bowl, mix together the oats, flour, baking powder and salt. Add the dry ingredients to the wet ingredients and stir until they are well combined. Fold in the chocolate chips.
Place rounded, heaping tablespoon-sized balls of the batter onto an ungreased baking sheet.
Bake for 14-18 minutes until golden brown. Remove from oven and let them cool in the pan.
