Pumpkin Carrot Soup

Serves 8

2 Tbsp. olive oil
1 cup onion, diced
2 celery stalks, diced
2 Yukon potatoes, peeled and diced
2 lbs. carrots, peeled and chopped
1 cup canned pumpkin puree
1 Tbsp. fresh ginger, minced
2 quarts chicken stock
1/2 cup heavy cream
2 tsp. fresh nutmeg, grated
Salt and pepper to taste

Heat oil in a large sauce pot.   Sauté onions, carrots, celery, and potatoes until tender.  Add stock and pumpkin,  and allow to boil.  Cook soup for 20-30 minutes to marry the flavors. 

In small batches, puree soup in a food processor or blender.  Please be careful not to fill the processor bowl as hot liquid expands quickly when blending.  Place pureed soup back into soup pot to reheat.   Add cream, nutmeg and ginger.  Salt and pepper to taste.

Feeling good...

Very often, the things you think will make you feel good in the moment will leave you feeling very bad in the long run. Yet you can choose to feel good by doing what’s truly good and right for you, for those around you, and for your world.

Don’t settle for just feeling good because of something you’re doing or something you have or someone you’re with. Don’t make your good feelings conditioned on what you’re watching, eating, drinking or experiencing.

Make the choice to feel great no matter what. Allow unencumbered good feelings to come from you rather than limiting your good feelings to only certain circumstances.

Pumpkin Whoopie Pies

Yields 1 dozen cookies(6 sandwiches)


 2 Sticks (8 oz.) unsalted butter, room temperature

1 cup light brown sugar

½ cup canned pumpkin puree

1 egg

1 ½ teaspoons baking soda

2 cups AP flour

1 ½ teaspoon pumpkin pie spice

1 teaspoon vanilla extract

¼ teaspoon salt

 

Preheat oven to 350 degrees F.

Cream together butter and sugar until light and fluffy.  Add pumpkin puree and egg and mix until combined.  Add baking soda, flour, spice, vanilla and salt and stir until combined.  Do not over mix.  

Scoop onto a parchment lined baking sheet.  Bake 10-12 minutes until golden brown.

Cool cookies.  Carefully Place scoop of ice cream in between cookies and carefully press cookies together to make an ice cream sandwich.  

 

Apple Cinnamon Gelato

 (One quart)


Ingredients:
5 egg yolks
1 cup sugar
2 cups heavy cream
2 cups whole milk
1 Tablespoon ground cinnamon

Mix in: apple filling

Instructions:

Place egg yolks and sugar in a large bowl and whisk until mixture is pale yellow and thick.  Set aside.

In a medium saucepan, heat the cream, milk, cinnamon and to just a boil. Allow to cool a little.

Gradually whisk into the egg mixture, adding slowly and whisking constantly to prevent cooking the eggs.  Return mixture to saucepan and cook gently, stirring constantly until mixture thickens slightly and coats the back of a spoon.  Do not boil.

Strain mixture, cool to room temperature in an ice bath, then cover and refrigerate until completely cold.

Transfer to an ice cream maker and freeze according to manufacturer’s instructions.  Remove from ice cream maker and fold in apple filling.  Freeze completely overnight.

 

Apple filling:

1 tablespoons unsalted butter
2 apples, peeled, diced and cored
½ cup brown sugar

In a non-stick pan, heat butter, apples, and sugar.  Cook over medium to low heat until sugar is melted and apples softened.  Remove from pan and cool.  

 

Pumpkin Crème Brûlėe
Serve 8

Ingredients:
3 1/2 cups heavy cream
1/2 Tablespoon vanilla extract
1 teaspoon pumpkin pie spice
½ cup pumpkin puree
1 cup granulated sugar, divided
6 large egg yolks
2 quarts hot water

Instructions:

1. Preheat oven to 325 degrees F.

2. Place cream into a medium saucepan set over medium-high heat and bring to just a boil.

3. In a medium bowl, whisk together 1/2 cup sugar, pumpkin puree

Geek of the Week: Post-it Plus

I haven't quite decided if this app is useful or useless.  You know how your desk or fridge are covered in Post-its?  This app lets you digitize these reminders and notes using your phone's camera, then sort, store and organize them right on your phone.  

 

This app is extremely useful if you're in an industry that uses Post-its in a collaborative environment to prepare for presentations.  Digitizing the notes allows you to share them with other services like DropBox or GoogleDrive, so the whole group is kept up to date and remains a part of the process.

On the other hand, if your sticky notes are reminders and motivational thoughts of the day...do you really need two copies?

Decide for yourself.  Post-it Plus is free on iTunes and works with iOS8.

Mascarpone filled Cannoli

Yield: 20 cones

16 ounces mascarpone cheese
1 cup heavy whipping cream
3 Tablespoons chocolate pieces or mini-chocolate chips
1/4 cup powdered sugar
2 teaspoons vanilla sugar
20 cannoli shells

Whip together mascarpone cheese, vanilla sugar, powdered sugar and heavy cream.  Fold in mini chocolate chips or chocolate pieces. Pipe into shells

Geek of the Week: The NEW Wave Streaming App!

The Wave changed streaming providers to improve our quality and with that comes a new and improved streaming app! (the old one is defunct, uninstall it). Along with improved quality, less commercial interruptions and more music, we added new features including album art, song and artist information, a list of recently played songs, a sleep timer and an alarm feature!

 

 

When searching for the app, it is important that you use WNWV. “The Wave” or “107.3” are helpful but won't get you the immediate results you're hoping for.

Crepes with Pear Ginger Filling

Makes 8 crepes

Ingredients:
1 cup all-purpose flour
2 large eggs
1 ½ cups whole milk
1 Tablespoons melted unsalted butter
1 teaspoon granulated sugar
1/8 teaspoon salt
Melted clarified butter for cooking
Powdered sugar for garnish

 

Directions:

Mix the flour with eggs and about ½ a cup of the milk until the batter is smooth.  Add remaining milk, sugar, butter, and salt.

Heat non-stick 10-inch pan. Grease the pan with clarified butter and pour about 2 tablespoons of batter into the hot pan. Twist the pan around to evenly cover the bottom with the batter and cook for a few minutes until the bottom turns light brown. Flip the crepe over with a spatula and cook for a few minutes longer.

Remove the crepe from the stove and place it on a plate. Repeat until all of the batter has been used.

Fill with Pear Filling.  Sprinkle with powdered sugar and serve.

 

Pear Filling:
2 Tablespoons unsalted butter
2 teaspoons ground ginger
4 large pears, peeled and diced
1 ½ Tablespoons brown sugar
2 Tablespoons pear liqueur

Melt butter in a large sauté pan.  Add ginger, sugar,  and pears.  Cook until sugar is melted.  Remove pan from heat, add liqueur.  Return pan to heat and cook until liquid is reduced and pears are fork tender.  Serve warm in crepes.
